The family business
We are not a restaurant. We are a syndicate of people who hear a patty hit a hot griddle and get emotional about it. We quote movies at the drive-thru. We treat pickles like made men. We believe a burger can ruin your afternoon in the correct direction.
The Burger Mafia is pop culture with grease on its chin: Godfather lighting, Goodfellas voiceover, Scarface volume, Sunday-gravy loyalty, and a bun that did not ask to be involved in all this.

We hold sit-downs. We settle beef. Sometimes the beef is actual beef. Sometimes it is someone who put ketchup on a masterpiece like it was a crime scene they were trying to clean.
Saturday night at the joint
Connie Cannoli. House singer. One song. No encores. She will not take requests for well-done, and she will not share a mic with Fredo.
Live from the back room. Burgers on the tables. Loyalty in the chorus. If you clap between verses, Fredo will think it is for him.
The Commission
Everybody eats. Not everybody sits at this table. If you recognize yourself in Fredo, that is between you and the Lord.

Bacon. Does the dirty work in the pan. If you hear sizzling at 2 a.m., do not look out the window. Look at the skillet.
The disappointment
Sweet kid. Terrible instincts. Once dipped in a milkshake without asking. We do not talk about the side-salad incident.
Soldier
Always in a pickle. Knows every back alley of the jar. Smiles like he brined your honor and left a little extra snap.
Sunday gravy
You do not refuse Mama. You do not rush Mama. You absolutely do not microwave Mama. She has been simmering since 1972.
Sleeps with the fishes
Fourteen hours in the pit. Loyal until the last slice. Currently napping on ice as a warning to anyone who overcooks family.
Witness protection
Used to ride with the crew. Now he is “just a salad.” Lives in a diner outside town. Still orders pie like a man with secrets.
Omertà
We do not write these down. We wrote them down anyway because the internet is a snitch and we are theatrical.
That is how you get made… into a mistake. The Don did not survive this long to be a hockey puck.
Condiments are a privilege. If the burger is correct, the burger does not need a disguise.
Fries are a witness. Keep them close. Share them only with people you would hide a body with. The body is a leftover smash.
A little grease on the cuff means you were present. A clean shirt means you were scared.
If you have to ask for the secret sauce, you are not ready for the secret sauce.
Some crimes the family cannot forgive. This is one. So is pineapple. We will not be taking questions.
Balance is everything. Acid, fat, salt, heat, and a little threat.
Unless it was perfect. Then you tell everyone, slowly, like a monologue in act three.

A slider so small it should not be this dangerous. Ghost pepper. Gold chain optional. Manners not optional.
Heat: molten
Extra extra cheese. Provolone that has seen things. Comes with a quiet word about your life choices.
Heat: church
Smash patty, marinara, basil, and the understanding that you will finish it even if you are already full.
Heat: dessert
You take the burger. Then you take the cannoli. Then you take a nap that looks a lot like Luca’s.
The sit-down
Build the job. We will dress it in Godfather grammar and send it back like a contract with grease stains.
